Salsa de Papaya Picante


1-2 medium Papayas, peeled, seeded and diced small
2 tablespoons fresh lemon juice (try limes also)
2 tablespoons extra virgin olive oil
2 teaspoons cayenne pepper (or to taste)
2 tablespoons chopped fresh cilantro
2 tablespoons shallots (try also scallions or red onion), chopped
Celtic or Himilayan salt and freshly ground black pepper to taste
          
Preparation method: Place papaya cubes in a bowl. In another bowl mix lemon juice with olive oil. Season with cayenne pepper, cilantro, chives, salt and black pepper. Stir well, pour on the handle, cover & refrigerate for about 30 minutes to incorporate flavors before serving. Serve with chips, sliced avocado or on top of rice.
