Mother's Day Recipes
This recipe just looks so papayalicious I had to share.
First, you peel, slice in half, core and seed the papaya. Then you slice horizontally until you have a few "boats" perfect for stuffing.
The filling you can use is pudding already made up or stuff with almond jelly.
Here is a pudding and almond jelly recipe below.
Serve and enjoy!
|1.||Pour 1 cup water in a bowl; sprinkle the gelatin over the water; stir until the gelatin is partially dissolved. Set aside.|
|2.||Bring 1 cup water to a boil in a large saucepan. Reduce heat to medium-low and slowly pour in the gelatin mixture. Add the milk, sugar, and almond extract; stir until the sugar and gelatin are completely dissolved; pour mixture into a large, shallow container. Refrigerate until firm, 3 to 4 hours. Cut into small squares to serve. If you use Vegan Gelatin then it only takes 1 hour or so.|
Now put the Almond Jelly into your sliced papaya! Cool and serve later!
Vegan Vanilla Pudding
- 2 cups vanilla Almond Milk, Coconut Milk or Rice Milk
- 2 tablespoons cornstarch (non-GMO)
- In a double boiler, whisk together milk and cornstarch.
- Bring mixture to a boil, stirring constantly, and cook until thickened.
- Transfer the pudding to single-serving airtight containers and let cool.
- Chill in the refrigerator overnight.
- Serve pudding into the papaya boats you cut earlier.
